Japanese Guacamole

Ingredients:

  • 1½ cups daikon (Japanese radish), shredded
  • 1 tsp. salt
  • 4 medium Calavo® avocados
  • ⅔ cup green onion, finely sliced
  • ½ cup fresh salmon caviar
  • ¼ cup plain rice vinegar
  • 2 tbsp. Japanese soy sauce
  • 1 tbsp. wasabi paste

Preparation:

  1. Toss daikon with salt; drain in a colander for 30 minutes, squeeze out as much liquid as possible and reserve.
  2. Coarsely mash avocados.
  3. Fold in remaining ingredients and reserved daikon with mashed avocados.
  4. Serve with rice crackers or shrimp chips.
